This is the VERY FIRST FOOD BLOG I have ever done.  but “why is she doing a blog about food?” do you ask?  Well, I figure I should tell you guys… I am a huge fan of food.  Scratch that.. I am a huge fan of flavor.  You ask anyone that knows me… five years ago? Kiralee is cooking? hard pass.  Now adays? I would like to think that my loved ones are happy to attend.  After my daughter was born, I decided to stay home.  Praise Jesus, I got to be a stay at home mama.  I honestly had no business doing the whole housewife thing, to be honest.  But.. I gave it my very best shot and you know what? I found out I love to cook.  I really really really love to cook.  So, I figure I should photograph some of this goodness that comes from our tiny kitchen.  Right? I am not gonna be annoying, like all of the other food blogs and make you sift through all of the gorgeous images taken, while cooking, to find out what is in it and how to do it so, here you go:

 

Tequila Lime Salmon & Fettuccini
2 large skinless salmon fillet, cut into cubes <–I didn’t cut them, I just fried them up.
1/2 cup of sliced onion
1/2 cup of sliced sweet bell peppers, your favorites
2 tablespoons of minced garlic <– who are we kidding? Use as much garlic as you want… seriously. #neverenoughgarlic
2 tablespoons of olive oil
1 teaspoon of salt
1 teaspoon of pepper
1 cup of good tequila <– hubby got Sauza.. I am impressed.
2 cups of heavy cream
2 tablespoons of grated Parmesan cheese, use good quality
2 tablespoons of fresh squeezed lime juice
fresh cilantro to garnish

1/2 pound of fettuccini, cooked and drained <– pay attention to the fettucini I bought.. It seriously made all the difference in the world.

Directions:
Saute the onion and bell peppers in olive oil on high heat until the onions are translucent. Be sure to stir often so nothing sticks. Season with salt and pepper. Add garlic and stir until garlic is fragrant. Add tequila and let it reduce until it’s almost evaporated. Add cream, cheese, and lime juice – reduce heat to medium and allow to cook until sauce has thickened. Toss in salmon and lower the heat. Cook until salmon has cooked through and sauce has thickened. Toss over pasta and garnish with cilantro.

Slice those onions and peppers!! and if you are lucky enough to get one of THESE ^^ babies for Christmas, then use it, because it is amazing and will change your life.
